High Protein Chicken Chilaquiles with Green Chiles and Eggs

This high-protein chicken chilaquiles recipe is my California-meets-Oaxaca take on the classic clean-out-the-fridge meal. Crispy tortilla chips are tossed with shredded rotisserie chicken, roasted green chiles, and salsa, then topped with eggs, Greek yogurt, cilantro, and pickled onions. It’s bright, spicy, comforting, and packed with protein.

Instructions

  1. Dice the onion.
  2. Heat oil in a skillet over medium heat. Add the diced onion and a pinch of salt. Sauté for 3-4 minutes, until the onion is soft and translucent.
  3. Add the shredded chicken, followed by the New Mexico green chiles or any roasted green chiles. Cook until heated through.
  4. Stir in the salsa and simmer for 1-2 minutes, until everything is heated through.
  5. Make small wells in the sauce and crack in the eggs. Pour the egg whites around the eggs so they cook evenly.
  6. Scatter some crispy tortilla pieces around the eggs. Cover and cook for 3-5 minutes, until the egg whites are set and yolks are still runny.
  7. Sprinkle the cilantro over the chilaquiles. Add dollops of Greek yogurt or sour cream, or sprinkle crumbled cotija or queso fresco over the top. Dust lightly with cayenne, then scatter a few extra crispy tortilla pieces over the top for crunch.
  8. Divide the chilaquiles between plates and garnish with lime wedges and pickled red onions. Serve immediately.

Chef’s Notes

  • Use tortilla chips for the quickest version, or bake or fry corn tortillas until crispy.
  • The contrast between crispy and softened tortillas is what makes great chilaquiles.
  • Rotiserrie chicken makes this a perfect leftover meal.
  • Use a thicker salsa if possible. Thin salsas may soften the tortilla pieces too quickly.
  • For extra protein, add more egg whites or more shredded chicken.
