Instructions

  1. In a blender, combine the yogurt, rolled oats, milk, chia seeds, almond extract (or vanilla), salt, and maple syrup or coconut sugar.
  2. Quickly pulse the mixture a few times, just enough to disperse the chia seeds evenly without breaking them down completely. Do not over-blend.
  3. Transfer the mixture to a quart-sized container with a lid. Refrigerate overnight (or at least 8 hours) to allow the chia seeds to absorb the liquid and thicken.
  4. When ready to eat, give the mixture a quick stir to ensure even consistency. Transfer the oats to individual bowls or jars. Top with sliced strawberries, bananas, coconut flakes, and a drizzle of creamy peanut butter.
