This Simple Chicken Soup is a comforting classic that I first learned in culinary school in Berkeley, California. Its straightforward preparation highlights fresh vegetables, tender chicken, and aromatic herbs. Perfect for a chilly day or when you’re feeling under the weather, this soup brings warmth and nourishment in every bowl. Serve it with sour cream, sauerkraut, and toasted tortillas or rice for an added touch of comfort.

Instructions

  1. Heat a large 8-quart stockpot over high heat and add olive oil. Add chopped yellow onion and let it brown, untouched, for about 3 minutes. Sprinkle with a large pinch of salt.
  2. Lower heat to medium and add carrots and celery. Cook for about 5 mins, stirring occasionally, until vegetables are softened. Add smashed garlic cloves and cook for another 2 mins, stirring gently.
  3. Place the whole chicken in the pot, breast side down. Pour in enough water (about 4 quarts) to fully cover the chicken. Bring heat up to a boil, then reduce to a gentle simmer. Skim off any froth or impurities that rise to the surface.
  4. Add parsley, thyme sprigs, bay leaves, dried oregano or basil, salt, and black peppercorns to the pot. Simmer uncovered for about 45 mins, or until the chicken reaches an internal temperature of 165°F. Add more water if needed to keep the chicken submerged.
  5. Add spinach or other leafy greens to the pot during the last 5 mins of cooking, just to wilt. Remove chicken from the pot and let it cool slightly. Debone the chicken, reserving the bones for making stock later. Shred or chop the chicken meat and return it to the soup. Taste and adjust the seasoning with more salt (about 1-2 Tbsp more) and pepper, if needed. Stir in freshly chopped cilantro for brightness.
  6. Serve hot with sour cream, sauerkraut, and toasted tortillas or rice on the side.

Note: Leftover chicken and broth can be used for Avgolemono (Greek Lemon Soup) recipe.
